Ingredients

  • 1 cup water
  • ½ cup vinegar
  • 4 tbsp white sugar
  • 4 tbsp banana ketchup
  • 1 tsp chili flakes
  • 1 tsp red chili (finely chopped)
  • ½ tsp minced garlic
  • ½ tsp soy sauce
  • ½ tsp salt
  • 1 tsp cornstarch (for slurry)

Method

  1. Pagsamasamahin lahat ng ingredients sa small sauce pan, except cornstarch.
Haluin ng bahagya para ma-dissolve ang sugar. Bring it to a boil and let it be for 2-3 minutes. Tandaan, huwag hahaluhin para di ‘mahilaw ang suka.’ Kapag kumulo na, pwede nang haluin at hayaan lang mag-simmer for 6-7 minutes. Then tikman.
Adjust the taste depende sa panlasa mo. Kung type mo nang mas matamis, add more sugar or banana catsup. Kung type mo ng mas maanghang, add more chili flakes (or chopped red chili). Kung gusto mo yung mas may ‘bite’ magdagdag ng suka or minced garlic.
  2. Thicken the sauce.
Para makagawa ng slurry, dissolve cornstarch in 2 tsp water. Add slowly to your sauce while stirring continuously. Let it simmer for 1 minute and then it’s done!
Pwede mong i-adjust ang lapot nito by adding more slurry. Just keep in mind, though, na mas lalapot pa yan kapag lumamig na.
